According to dictionary.com, Random House and American Heritage both think 'ninjas' is an acceptable alternate plural.

Those were created by someone who was not known for his spelling. It is suspected that the proper spelling should be sward-chaku, but there is no proof of such.

According to my dictionary, nunchuk and nunchaku are equivalent, and the plural is either nunchaku or nunchakus.

'nunchucks', however, is right out.
