You've got a pretty good list here! I personally own and can vouch for the awesomeness of Valkyria Chronicles, Little Big Planet, Heavy Rain (very very polarizing, but I fell into the "liked it" column), 3D Dot Game Heroes, Demon's Souls, Yakuza 3, Ratchet & Clank Future: Tools of Destruction, and obviously Aquanaut's Holiday. Pain and Afrika are decent; the former is kind of a one-trick pony but may indeed be more appealing if you're really into physics toys, while the latter is no Aquahol, as nature-porn games go, largely because it doesn't have the same sort of surprisingly tasty story-gravy and the Jeep is a pig to drive. Good fun for a while, though, especially if you can get it cheap.
Additional recommendations, available now: Flower, a downloadable and one of my favorite "art games". IMHO, a must-have at the price. Ratchet & Clank Future: A Crack in Time, sequel to Tools of Destruction, same again but more, and with some neat time-manipulation puzzles.
Personally beloved but perhaps not your cuppa: Metal Gear Solid 4. Somewhat polarizing, but in my book, a worthy closure to Snake's story. It's very much a fans' game, though; if you're not much for MGS, it won't do anything to change your mind, and it's got Kojima all over it.
Potential sexy for the future: The Last Guardian, next big game from Team ICO. Majin, in which you have a pet giant-monster thing who can hurl you around. Project Dark, another dark fantasy game from From, possibly a spiritual successor to Demon's Souls. Yakuza 4, which has been announced for the US, yay. Yakuza: Of The End, in which the zombie apocalypse comes to Kamurocho, localization potential unknown. Ni no Kuni, a game co-developed with Studio Ghibli, and damn, does it ever look the part. Fist of the North Star: Ken's Rage, basically Dynasty Warriors with the punching and the exploding and the hey hey hey.
